Fruit for our Sauvignon Blanc is grown primarily in the Russian River Valley and along the Sonoma Coast. The grapes are harvested at night and immediately sorted at the winery. After pressing, the juice settles overnight. The juice is then carefully transferred to neutral oak barrels and stainless steel tanks for fermentation, preserving the unique and intense aromatics of the varietal.
Tasting Notes: Heady notes of fresh cut melon, Key Lime, and subtle undertones of lemongrass pair seamlessly with crisp acidity and chalky texture to create a mouthwatering and deliciously irresistible experience.
Food Pairing:
Cheeses: Cow’s-milk cheeses flavored with garlic and herbs such as Le Roulé and Boursin, and goat cheeses such as Humboldt Fog and Tomme de Chèvre Aydius.
Meats and Fish: Grilled fish, especially oily fish such as sardines and mackerel; garlicky prawns and chargrilled squid. Grilled chicken or lamb with bold marinades or creamy sauces.
Cuisine: International cuisine including Japanese, Mexican, and Mediterranean.
Complex and elegantly composed, this delicious and appetizing wine seamlessly blends crisp citrus, ripe cantaloupe, minerals and subtle spices on a medium body backed by mouthwatering acidity.
